主要以粮食油料等农产品为研究对象,开展淀粉科学、蛋白质化学及营养活性成分的前沿基础理论研究,研发精深加工新技术,开发高附加值新产品。在Food HydrocolloidsIndustrial Crops and ProductsFood Chemistry等学术刊物上发表研究论文200余篇,授权发明专利16项。
